- 400 grams white beans (1 can, cooked, rinsed and drained)
- 1 white onion (diced)
- 1 green chilli pepper (fresh, deseeded and finely diced)
- 2 cloves garlic (minced)
- 1 cup spinach leaves (chopped)
- 1/2 cup enchilada sauce
- 1/2 cup cashews
- 1 pinch sea salt
- 1/4 cup water
- 1 tsp. lemon juice
- 1 tsp. apple cider vinegar
- 2 Tbsp. grated cheese (vegan, optional)
