- 2 shallots (medium)
- 4 garlic cloves
- 1 piece ginger
- 2 stalks lemongrass (soft inner part chopped roughly)
- 4 chillies (green Thai, deseeded for less heat)
- 1 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/4 tsp. pepper (ground white, or black if unavailable)
- 1 bunch coriander (use the leaves to serve)
- 1 tsp. salt
- 3 Tbsp. oil (neutral tasting, I used rice bran)
- 400 mL full fat coconut milk (from a tin)
- 6 makrut (fresh, previously known as Kaffir lime leaves)
- 480 mL stock (veggie, or water)
- 1 Tbsp. tamari sauce (OR vegan fish sauce*, more to taste)
- 1/2 lime
- 2 tsp. sugar (I used coconut sugar, adjust to taste)
- 1/2 butternut squash (small, or a sweet potato, cubed)
- aubergine (a small, / eggplant, cubed)
- 50 grams sugar snap peas (sliced on the diagonal)
- 100 grams tenderstem broccoli
- 1 handful bean sprouts (blanched)

Baked the aubergine/butternut squash as suggested and really enjoyed the whole meal. Wasn't super filling so ended up eating as just two large portions, but very tasty. Next time I'd sprinkle some roasted cashews ontop for some extra texture/protein. Would defs make again, very savoury and appealing

very flavourful and packed with great veggies!!! I roasted the pumpkin and eggplant and simmered the brocooli and snow peas as i think it packs more flavour that way

Filling and nutritious! Didn’t have as much flavor as I anticipated. I also just steamed all of the veggies rather than baking them which may have changed the flavour. Overall though I am satisfied with the result.
