- 1 1/2 cups vegetable broth
- 1 tsp. ancho chile powder

- 1 cup raw cashews (soaked for 1 hour in warm water, water reserved)
- 10 Tbsp. water (reserved soaking)
- 2 Tbsp. nutritional yeast
- 2 Tbsp. lime juice
- 1 Tbsp. white vinegar
- 1 tsp. white miso
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 3 dashes smoked paprika
- salt (to taste)
- 1/2 red onion (diced)
- 3 cloves garlic (minced)
- 1 1/2 cups black beans (cooked, or one 15-ounce can, rinsed and drained)
- 1 1/4 cups vegetable broth
- 1 Tbsp. liquid aminos
- 1 tsp. ground cumin
- 1/2 tsp. ancho chile powder
- 1/2 tsp. smoked paprika
- 1 pkg. crumbles (Beyond Meat Beef-Free, I used the Fiesty variety)
- 1 cup frozen corn kernels
- 1/4 cup chopped cilantro (fresh, plus some for garnish)
- 2 Tbsp. diced green chiles (canned)
- 1 Tbsp. lime juice
- salt
- pepper
- 6 corn tortillas
- avocado (slices, for garnish, optional)
- sliced black olives (for garnish, optional)
- pepitas (for garnish, optional)
