- 4 cups yukon gold potatoes (Idaho yellow or Yukon Gold, cubed, I left the skins on)
- 3 cups carrots (cut into disks)
- 2 cups diced celery
- 1 leek (green, top removed, sliced or diced)
- 3 large garlic cloves (minced)
- 2 Tbsp. olive oil
- 8 cups vegetable stock
- 2 cups water
- 1 tsp. ground mustard
- 1 1/2 tsp. sea salt
- 3/4 tsp. pepper (to taste)
- 1 tsp. dried parsley (heaping)
- 1/2 tsp. liquid smoke (but preferred, optional)
- 1 tsp. marjoram
- 1 tsp. thyme
- 1 tsp. rosemary
- 1 tsp. sage
- 1 tsp. oregano
- 1 tsp. dried basil

- oyster crackers (or gluten free crackers for garnish)
