- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 3/4 cup white sugar
- 1 packet vanilla sugar (optional)
- 1/2 cup coconut oil (softened just a bit so you can cream it with the sugar; I do this by microwaving it for under 10 seconds, watching it closely so it doesn't melt)
- 1 ripe banana
- 1 tsp. vanilla extract
- 1/4 tsp. almond extract
- 1/4 cup sugar (for coating)
- 1/2 Tbsp. cinnamon (for coating)

Have made these several times and the cookies are always great. A very flexible recipe for changes or additions. I was able to reduce sugar to 1/2c to offset sweetness of banana. Soft and chewy, and freeze very well to grab one at a time.

Turned out great! I’m not a big baker, especially vegan recipes, so I was nervous was very easy to follow!! Turned out delicious!

Very delicious! I used whole wheat pastry flour, so I baked them for 16 minutes. I will make this again, but next time omit the salt. It was too salty for me. 🍪
