- 1/2 cup freekeh (whole, smoked wheat; alternately, use wheat berries)

- 6 garlic cloves
- oil (for frying)
- 3 large potatoes (medium-)
- 2 carrots
- 3 tomatoes (ripe)
- 8 bay leaves
- 1 tsp. coriander seeds (whole)
- 1 tsp. cumin seeds (whole)
- 1/2 tsp. ground black pepper
- 1 1/2 tsp. salt
- 2 tsp. sweet paprika
- 1 pinch asafoetida (optional, but you’ll thank yourself!)
