- 1 yellow onion (diced)
- 1 tomato paste (6 oz can)
- 3 cups brown lentils (cooked french lentils, I get the pre-cooked one's from trader joe's)
- 2 cups chopped carrots
- 1 cup frozen peas
- 2 cups mini bella mushrooms (chopped, you can use white button too)
- 1/2 cup red wine (I use organic vegan wine from trader joes - Charles Shaw brand)
- 1 1/4 cups broth (veggie)
- 1/2 tsp. dried thyme
- 1/2 tsp. dried rosemary
- 1 tsp. dried parsley
- 1/2 tsp. garlic powder
- 1 1/2 tsp. salt
- 6 Yukon Gold potatoes (medium)
- 1/4 cup nutritional yeast
- 1 cup almond milk
- 1 1/2 tsp. salt
- 1 tsp. garlic
