- 10 oz. quinoa pasta (or about 2 1/2 cups of Ancient Harvest)
- 1 cup yellow potatoes (peeled/diced, equates to about 2 small potatoes)
- 1/4 cup carrots (peeled/diced, equates to about 1/2 of a carrot)
- 1/3 cup chopped onion (equates to about 1/4th a small onion)
- 1 clove garlic
- 3/4 cup water (preferably use liquid from pot of boiled veggies)
- 1/2 cup raw cashews
- 1/2 cup coconut milk
- 2 Tbsp. nutritional yeast flakes
- 1/2 lemon
- 1 tsp. kosher salt (or more to taste)
- 1 pinch paprika
- 3 oz. quinoa (oz, full bag of I Heart Keenwah truffle sea salt, puffs, blended in a food processor until breadcrumb texture is achieved)

My gf didn’t think it tasted cheesy, but I made it the base to a bean soup for myself, which is weird combo, but it was really good. I added a tiny bit of a fresh chili pepper.
