- 1 Tbsp. sugar
- 1/2 cup coconut oil (– cool enough to be solid)
- 1/2 cup ice water
- 2 cups pureed pumpkin
- 1 cup almond milk (although rice, soy or coconut will work too.)
- 1/2 cup sugar (. I generally go easy on the sugar. I think generally these recipes call for more)
- 3 Tbsp. corn starch
- 1 tsp. vanilla extract
- 1 tsp. canela
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 1/4 tsp. allspice

I only used the filling from this recipe (I made the never fail pie crust recipe) and it was great, though I halved it to make one pie. I accidentally used a whole can instead of just one cup but it still tasted good lol. I'm going to try this again today. I had to turn the heat down from 400 to 350 but I may try 30 min at 400 then turn down to 375 for 15-20 minutes.
