    Well, the recipe was very promising at first. The batter looked great and I replaced sunflower oil with just canola because we didn't have any, and put the cinnamon in with the other dry ingredients. I added some chocolate chips while they were on the griddle too. We know our griddle hasn't been the best so I'm not sure it's my fault or not, but the pancakes were undercooked. And they only made 8, so if you'd like more than 8 you should double or triple it.

    For the extra 1/4 cup of flour I used coconut flour. Also ended up having to add more almond milk but theses are seriously the BEST vegan pancakes I've ever made!!!! But you have to be VERY careful though when flipping and cook them on low heat. Next time we are going to try Aquafaba as a binder because they do kinda fall apart but seriously best flavor ever!
