Replaced veggie oil with coconut oil, omitted fennel, cooked the tofu til very crispy, and the whole thing turned out fantastic.

A little bland as far as palak paneer goes. The fennel came out a little too prominent so I would cut back on the recommended amount and add more spice next time.

I have to say, this dish is very good, but I can't say that it's just as good, or better than the palak paneer from my favorite Indian spot.
