- 1 tomato (diced, plus about half of another for garnish)
- 4 oz. green chilis
- 1 handful cilantro (chopped, plus more for garnish)
- 1 Tbsp. tapioca flour (or arrowroot starch)

- black pepper (to taste)
- salt (to taste)
- 1 tsp. lemon juice
- 1 clove garlic (finely minced)
- 1 cup dry white wine
- 1 Tbsp. cognac
- 1 Tbsp. tapioca flour
- 3 Tbsp. water
- black pepper (to taste)
- nutmeg (to taste)
- 2 cups ackee (Parboiled or canned, approximately 1 can)
