- 2 Tbsp. lemon juice
- 1/2 cup coconut milk (thick, or 1/4 cup if thin.)
- 1 cup coconut butter (softened, put the jar in a bowl of warm water)
- 3 Tbsp. nutritional yeast
- 1 tsp. salt (unprocessed)
- 1/2 tsp. vitamin c (crystals, optional, for a sharper cheese flavor.)
- 1 clove crushed garlic (fresh, optional., Try it, it's amazing!)
- 2/3 cup coconut oil (melted, put the jar in a bowl of lukewarm water)
- 3 Tbsp. olive oil (if needed for blending)

I wanted to like this recipe, but even with JUST the coconut oil it was way over powering. Jane says it won't taste like coconut, pfft, it does. If you are sensitive to it (ie can taste it in anything like acv) then you will very much dislike this like I did. I'll try another mozzarella recipe.
