- 100 grams vital wheat gluten (1/2 tightly packed cup)
- 3 Tbsp. chickpea flour
- 2 Tbsp. nutritional yeast (the ‘meaty’ kind)
- 1 Tbsp. liquid coconut oil
- 100 grams cashew nuts (finely chopped, about 1/2 cup chopped)
- 7 button mushrooms (large, coarsely grated, about 1 tightly packed cup grated)
- 1/2 tsp. marmite (or vegemite, don’t omit!)
- 3 Tbsp. hot water
- 1 clove garlic (finely grated, don’t omit!)
- 1 Tbsp. raw cane sugar (you can use another type of neutral sugar)
- 1 Tbsp. less sodium soy sauce (or less sodium tamari)
- 2 Tbsp. red wine
- 1/4 tsp. kala namak (fine)
- 1 Tbsp. Dijon mustard (don’t omit!)
- 1/2 tsp. ginger powder (don’t omit!)
- 1/2 tsp. ground nutmeg
- 1 tsp. dried sage (rubbed to release flavour)
- 2 shallots (largeish, finely chopped, you can sub with 1/2 small onion but shallots are less ‘harsh’)
- 5 parsley sprigs (curly, finely chopped)
