It just went in he oven, so no comment on the finished product yet, but the dough was so perfect I had faith it's going to be amazing. Lovely texture and taste.
I followed the recipe exactly, except I only had limes in the house so lime juice it was. And while I was at it, I added 1/2 tsp of orange extract to compliment the almond and make it a citrusy loaf. Thank you for figuring out the science of vegan baking for me because the last time
I made matcha muffins, they were blah!
