- 2 cups green lentils (sorted washed and rinsed)
- 1 can crushed tomatoes (I like Muir Glen's fire roasted)
- 4 cups water (or vegetable broth)
- 1 medium onion (finely chopped)
- 6 cloves garlic (minced)
- 2 medium potatoes (roughly chopped)
- 1 cup carrots (each - celery, and corn)
- 1 green pepper (and cilantro for garnish, optional)
- 1 Tbsp. oil (I used Avocado Oil)
- 1 Tbsp. coriander powder (cumin)
- 1 1/2 tsp. smoked paprika
- 1 1/2 tsp. all purpose seasoning (. Trader Joe's 21 seasoning salute -my go to favorite)
- 2 bay leaves
- salt
- pepper
