- 6 Tbsp. aquafaba (see recipe notes for explanation of what this is)
- 1 1/2 cups all purpose gluten free flour (see recommended brand below in recipe notes. All gluten free flours are different)
- 1/4 tsp. salt
- 2 tsp. lemon zest (zested from 2 Myers lemons)
- 1/2 cup organic cane sugar
- 1 1/2 tsp. baking powder
- 1/2 cup milk (plant based, any non dairy milk will do)
- 2 tsp. apple cider vinegar
- 3 Tbsp. lemon juice (squeeze, preferably from Myers lemons)
- 1/2 cup vegan butter (melted, the sticks work best for baking...1/2 would be one stick)
- 1/2 tsp. lemon extract (optional)
- 1 cup powdered sugar
- 2 Tbsp. lemon juice (squeeze, preferably from Myers lemons)
