- 6 dried shiitake mushrooms
- 2 1/2 cups water (divided)
- 1 Tbsp. oil
- 1 small onion (thinly sliced)
- 1 kimchi (tightly packed cup, about 200 grams vegan)
- 1/4 cup kimchi juice (from the bottom of the jar or squeeze it out of the kimchi)
- 1 Tbsp. soy sauce
- 1 Tbsp. Korean chili paste (gochujang)
- 2 tsp. Korean chili flakes (gochugaru, adjust to taste)
- 2 tsp. sugar (optional)
- 1/2 extra firm tofu (or a package of firm, sliced into 6 slices)
- 1 tsp. sesame oil
- 2 green onions (sliced)
- 2 radishes (cut into matchsticks, optional)
