- 2 bay leaves
- 2 cups mixed beans (or lentils, I used chickpeas, kidney beans, white beans and brown lentils)
- 1 Tbsp. miso paste (dark)
- 1/2 tsp. salt (or to taste)
- freshly ground pepper
- brown rice (to serve)
- 1 handful fresh parsley (for garnish, optional)

This is my go to for comfort and ultimate flavour 👏🏽 the amount of times I’ve made this, I’ve mastered making a roux!

Cooked this for vegan guests. It was delicious and have come back to it time and time again for anyone, not just the vegans!
Unlike the review before me, I thought the roux to be tasty and a great addition. I've used it since to thicken other dishes.
