- 8 oz. serrano chiles (green, chopped and seeds removed)
- 1 shallot (large, chopped)
- 4 garlic cloves (chopped)
- 2 lemongrass stalks (tough outer layers removed)
- 1 piece ginger (grated)
- 1 piece turmeric (grated, or ½ teaspoon ground)
- 1 lime (zest of)
- 1 tsp. ground coriander
- 3/4 tsp. ground cumin
- 1 1/2 Tbsp. maple syrup
- 3/4 tsp. salt
- fresh ground black pepper
- 1/4 cup vegetable broth
- 1/2 cup vegetable broth (for sautéing PLUS 3-4 cups for broth)
- 1 shallot (diced)
- 5 cremini mushrooms (or white, sliced)
- 1 cup light coconut milk
- 1 1/4 cups fresh basil leaves (chopped, & some basil leaves for garnish, optional)
- 8 oz. broccolini (trim off stems and slice any thick spears from top to bottom into a thinner spear)
- 1/4 lb. sugar snap peas (or snow peas or combination of both)
- 8 oz. fettucini (Shirataki, pre-cooked noodles, I like low carb, low calorie tofu fettuccine noodles Or use your favorite noodles.)
- 6 oz. extra firm tofu (cubed)
- 1 lime (juice from)
- water chestnuts (Optional add ins:)
- fresh basil (Garnish Ideas:, Lemon Wedges, Bean Sprouts, Thinly sliced green chiles or jalapeño, Lemon, Turmeric, Lemongrass Zest, Scallions, optional)
