  • 1 yellow onion (medium, or about 1 cup chopped)
  • 1 medium tomato (diced)
  • 1 red bell pepper (sliced)
  • 1/2 cup white vinegar
  • 2 garlic cloves (minced)
  • 2 tablespoons tomato (powder, you can use tomato paste also)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon Himalayan salt (always start with less and add more as needed for flavor)
  • 1 dash black pepper
  • 1 dash cayenne pepper
  • 6 cups water
  • 1 cup broth (veggie, to saute vegetables)
  • 1/4 cup fresh parsley (adds a nice flavor and also a beautiful green color)
  • 1 cup red potatoes (chopped, takes about 2 small potatoes)
  • 1 tablespoon dried basil
  • 1 cup carrots (chopped, about 2 to 3 carrots)
