- 1 Tbsp. spice mix (fajita, chilli powder, cumin, paprika, cayenne pepper, garlic powder, salt, ground black pepper)
- 400 grams firm tofu (sliced into 1 inch cubes)
- 1 Tbsp. cooking oil (your choice)
- 250 grams passata
- 1 Tbsp. cooking oil (your choice)
- 1/2 courgette (sliced)
- 1/2 aubergine (sliced)
- 1 onion (small, diced)
- 6 cherry tomatoes (halved)
- 5 chestnut mushrooms (quartered)
- 1 red pepper (sliced into 1 inch cubes)
- 1/2 lemon (Top tip: keep the other half in the fridge and you can use the slices in hot water for a reviving drink)
- 1 tsp. cumin
- salt

- 1 bowl tofu (for the spiced, chunks)
