We really enjoyed these! Did not use the parsley, but otherwise followed the directions. I would say these are closer to 300 calories per eggplant gyro

This delicious recipe is on regular rotation. I only use 1 eggplant (but the full amount of everything else) and it still makes 4+ servings! Try using spicy hummus for an extra kick.
