- 1/2 cup extra-virgin olive oil
- 1/4 cup minced onions
- 1 inch ginger (piece of, grated or minced)
- 3 cloves garlic (grated or minced)
- 1 inch cinnamon stick (piece)
- 1 tsp. turmeric
- 1/8 tsp. grated nutmeg
- 3 cloves green cardamom
- 1/4 cup red chillies (dry)
- 1 Tbsp. paprika
- 1 inch cinnamon (stick)
- 1 tsp. ginger powder (ground)
- 1/2 tsp. coriander seeds
- 3 cloves
- 2 berries (allspice)
- 1 tsp. grated nutmeg
- 8 oz. tempeh (1 package ,cubed and sprinkled with juice of half a lemon, The tempeh is optional. I just used this for extra protein and it was delicious, but just use veggies if you can't find this or don't want to use it)
- 1 1/2 lb. crimini mushrooms (halved or quartered if large, eggplant and potatoes would also be great in this dish)
- 3 onions (medium, finely chopped)
- 6 oz. tomato paste (1 can of)
- 1 cup dry white wine (optional)
- 1 Tbsp. garlic (grated)
- 1 Tbsp. ginger (grated)
