- 1 onion (large, chopped)
- 2 stalks celery (chopped)
- 1 green bell pepper (chopped)
- 4 strips vegan bacon (choice, chopped)
- 2 cloves garlic (minced)
- 1 cup brown rice (or long-grain white)
- 2 3/4 cups water
- 1/2 tsp. smoked paprika
- 1/2 tsp. sweet paprika
- 1/2 tsp. dried thyme
- 1/2 tsp. salt (or ½ vegan chicken style bouillon cube)
- 1/4 tsp. freshly ground black pepper
- crushed red pepper flakes (to taste)
- 1 1/2 cups black eyed peas (cooked, or 1 can, drained and rinsed)

I added too much salt as i used mushroom broth instead of chicken (homemade). I didn't use bacon but added liquid smoke instead. And, I used asian black rice, so I had to cook it for more than twice what was called for.

This Cajun inspired dish was good and easy. I suggest seasoning your black-eyed peas well before adding to the rice.
