- 1 kg butternut squash (or pumpkin)
- 2 onions (medium)
- 2 tomatoes
- 6 garlic cloves
- 1 red bell pepper (optional)
- 2 handfuls spinach
- 1 can coconut milk
- 1 can green peas (or chick peas)
- 1 can tomatoes (tinned)
- 200 grams brown rice
- 2 Tbsp. coconut oil
- 1 lemon
- 50 grams ginger
- cumin
- curry powder
- curcuma (which is the main ingredient of curry powder but I add it anyway)
- chilli pepper (I didn’t have it last time so I added paprika powder, not the same)
