- 15 oz. chickpeas (rinsed and drained)
- 1/2 cup toasted sliced almonds (can also use chopped roasted almonds)
- 1/2 cup dried cranberries
- 1 bunch green onions (chopped)
- 3/4 cup chopped fresh cilantro
- 1/4 cup Tahini
- 1/2 lemon (large, juiced)
- 5 Tbsp. warm water (to thin dressing)
- 1 clove garlic (finely minced)
- 2 tsp. pure maple syrup (to sweeten)
- 1 tsp. yellow curry powder
- 1/2 Tbsp. ginger (freshly grated)
- 1/2 tsp. ground turmeric
- 1/2 tsp. salt

I didn’t have craisins so I used golden raisins, which I sautéed with raw almonds and olive oil.
I roasted the chickpeas with a little olive oil, but next time I’m also going to add turmeric and other spices for the roasting.
I also steamed the broccoli and carrots with a little water for a minute or two, just so they were lightly cooked instead of raw. Next time I’m going to roast them with the chickpeas.
It’s a little bland but I’m hoping the flavors will pick up as it marinates this week. I might have not added enough salt for my tastes as well (I don’t measure salt when I cook).
