- 1/4 cup coconut milk
- 1 Tbsp. granulated sugar
- 1 1/2 tsp. dried basil (or a few tablespoons of fresh, if you have it)

I’m so happy with this vegan take on classic tomato soup!! I soaked the cashews which made it thick and creamy, without any cashew flavor. Added some tomato paste for a stronger taste, and omitted coconut milk which my kids don’t like.

loved it. easy to make. mostly followed the recipe but didn't add sugar. will definitely make it again
