This is a go to for my family. One of the best easy Thai-ish recipes I’ve found and so easy to put together. If you like Thai flavors (like lime and coconut) ignore the review below, you will love this recipe!!

This one gets a third star for being a good idea in need of tweaking.
My husband told me while eating it that he dislikes coconut milk, and he didn't mean "...until now." If I make this again, I'll substitute cream.
UPDATE 7/3/20: Tried with sour cream and yogurt instead of coconut milk. Meh.
