Delicious and fairly easy to make. 11 year old daughter praised it and asked for seconds (this never happens with the vegan food I cook).
Notes to self so I can replicate next time
- used half fresh crimini mushrooms, half dried portobellos, all finely chopped
- used water instead of stock
- used a few shakes of TJ 21 spice mix instead of Mrs. Dash
- puréed most of the solids to make smoother
- used potato starch instead of corn starch
