- 4 cups cauliflower florets (fresh or frozen)
- 2 Tbsp. olive oil
- 4 heads broccoli (/stalks fresh, cut into bite-size florets, about 8 cups)
- 1 yellow onion (or large white, finely diced)
- 4 cloves garlic (minced)
- 3 3/4 cups low sodium vegetable broth
- 1 1/2 cups filtered water
- 2/3 cup raw cashews (soaked for two hours, unless using a high-speed blender*)
- 1/4 cup nutritional yeast
- 2 Tbsp. fresh lemon juice
- 1 1/2 tsp. sea salt (plus more to taste)
- freshly ground black pepper (to taste)
- 3 dashes smoked paprika (optional, but recommended)
