Turned out wonderfully— we used less coconut milk (around 1.25 cups) and added sweetened applesauce (around 0.5 cups) instead of sanding sugar. We also added vanilla, cinnamon, pumpkin spice, cloves, and nutmeg to spice it up. Waffles were spongy and delicious though honestly could have added a little more moisture to it.

The flavor and texture are fantastic, but I added unsweetened applesauce and used 1 1/4 cans of coconut milk to thin it out enough to spread with a spoon. I will do this again!

so yummy. will make again. came out a bit thick so added a bit more coconut milk to moisten a little
