- 5 cups vegetable stock (mild, I use 2 cubes vegetable bouillon and 4-5 cups water)
- 1 Tbsp. ground turmeric
- 2 Tbsp. sugar
- tamari sauce (to taste)
- 8 oz. carrots (scrubbed and thinly sliced on the diagonal)
- 8 oz. cauliflower (in bite-sized florets)
- 8 oz. broccolini (left whole or broccoli florets, in bite-sized florets)
- 8 oz. baby bok choy (small, halved lengthwise and cleaned)
- 12 oz. extra firm tofu (or firm, cut into 1-inch cubes or triangles)
- 2 Tbsp. vegetable oil (such as sunflower)

I liked it very much! I left out the broccoli and sugar but it was still delicious. I think ginger will go well with it, I'll try that next time.
