- 360 mL almond milk
- 1 1/2 tsp. cider vinegar
- 260 grams caster (superfine sugar)
- 150 mL sunflower oil (scant 2/3 cup)
- 2 tsp. vanilla extract
- 230 grams flour (scant 2 cups plain, all-purpose)
- 80 grams cocoa powder (Dutch processed)
- 3/4 tsp. baking powder
- 1 tsp. bicarbonate of soda (baking soda)
- 1/4 tsp. salt

I really had fun making this cake. It’s so easy and did not take so much of my time. I’ve never baked a vegan cake before and this blew my mind how it turned out to be moist and great tasting, especially the ganache! My family and co-workers loved it, too!!The only thing that I would like to improve though is its consistency. I find it crumbly every time I get a slice of it. I don’t know if it has something to do with the oil I used because I put vegetable oil instead of the sunflower oil. But the longer it stayed in the fridge the more moist it got.
I experimented on my leftover ganache by making a matcha coconut chocolate truffles.
It’s so yummy and smooth. I can hardly tell there’s coconut milk in that ganache.
I actually baked this cake recipe again last night and just kept them in the fridge to be frosted tomorrow. We’ll see how my 2nd one does since I now used sunflower oil. ( finally found it !).

Best cake ever! so moist and really chocolatey my friends didn’t believe it was vegan, they never thought a vegan cake could taste soooo good! Will be making this again and again!
