I soaked the lentils in hot water for 20 minutes as I was prepping veggies, and I substituted crushed tomatoes for diced. Really happy with how it turned out!

This was delicious and easy to make. I added vegetable stock in place of water and a few red pepper flakes to add a bit more flavor. It’s warm and hearty on a rainy day.

Very hearty and healthy soup- delicious. There was enough to last for days! Wonderful w a drizzle of balsamic vinegar on top.

Very good i think maybe next time ill use vegetable broth instead of water i think that will give it a good flavor

Easy and delicious! Didn’t alter much but did forget the lemon at the end and it was still good. Paired this with a simple salad and it lasted for lunch all week!

Excellent! added an extra can of tomatoes to add more liquid...will make agaiin!
