- 1/2 cup raw cashews (soaked for at least 2 hours and drained)
- 1/3 cup water
- 1 tsp. Dijon mustard
- 1 clove garlic (roughly chopped)
- 1 Tbsp. capers
- 1 Tbsp. lemon juice (freshly squeezed)
- 1 1/2 Tbsp. red wine vinegar
- 1/4 tsp. fine salt
- 1/8 tsp. freshly ground black pepper
- 3 Tbsp. nutritional yeast
- 1 cup cooked chickpeas
- 3 cups chopped romaine lettuce (roughly)
- 2 cups kale (Tuscan, lacinato, washed, stemmed, and torn into strips or pieces)
- 1 Tbsp. capers (mostly drained, a little of the liquid is fine)
- 2 wheat (large, whole, or regular wraps, I recommend at least 8-10" diameter for easy wrapping!)
- 1/4 cup vegan bacon (chopped, a handful of chopped, sun-dried tomatoes, or additional veggies of choice, optional)
