- 1 glug oil (sunflower seed, or any other neutral vegetable oil)
- 1 cup cashews (good-quality, chopped into pieces between 0.5 and 1 cm, discard pulverised bits as they will burn)
- 4 shallots (small, diced finely, you can sub with red onion)
- 4 garlic (big cloves, halved then sliced)
- 4 cups water
- 4 Tbsp. nutritional yeast (the ‘meaty’ kind)
- 4 Tbsp. low sodium soy sauce (or low sodium tamari to make it gluten-free)
- 2 Tbsp. white wine (don’t omit!)
- 1 1/2 tsp. sesame oil (don’t omit!)
- 1/2 tsp. dried thyme (optional)
- 1 pinch kala namak (optional)
- salt
- black pepper
