- 3/4 cup firm tofu (or cubed medium)
- 3/4 cup water
- 2 Tbsp. olive oil
- 1 pitted Medjool date
- 3 Tbsp. lemon juice
- 1 tsp. lemon zest
- 3 1/2 Tbsp. nutritional yeast
- 1 Tbsp. apple cider vinegar
- 1/2 tsp. Dijon mustard
- 1 tsp. sea salt
- 1 tsp ground pepper
- 1/2 firm tofu (brick of)
- 1/4 cup tamari (can sub soy sauce or bragg's aminos)
- 1/4 cup water
- 2 Tbsp. liquid smoke
- 2 Tbsp. maple syrup
- 1 1/2 tsp. smoked paprika
- 4 cups romaine lettuce (roughly chopped)
- 1/4 cup red onion (thinly sliced)
- 2 chicken breasts (vegan, we used PC Blue Menu vegetarian chicken breasts*)
- 2 tsp. vegetable oil (for frying)
