- 1 small onion (finely diced)
- 3 cloves garlic (whole)
- 3 cups kale leaves
- 2 Tbsp. olive oil (divided)
- 1/2 cup raw cashews (soaked for 20 mins in hot water)
- 1 cup almond milk
- 2 Tbsp. apple cider vinegar
- 1/4 cup nutritional yeast
- 1 tsp. sea salt
- 1/4 tsp. chili flakes
- 2 tsp. Dijon mustard
- 2 Tbsp. tapioca starch
- 14 oz. tofu (silken or regular will both work, silken makes it creamier)
- 1 Tbsp. white miso (optional)
- 1/4 cup sundried tomatoes
- 1/2 tsp. smoked paprika
