- 1 tsp. dried basil
- 1/4 tsp. salt (plus more to taste)
- 1 pinch red pepper flakes
- 24 Tbsp. warm water
- 6 oz. jumbo shells (about 20, cooked al dente)
- 2 cups marinara sauce
- 1 batch ricotta (vegan cashew, see above)
- 1 cup spinach (chopped, optional)
- 1/2 cup sliced mushrooms (optional)
- 1/4 cup Parmesan (vegan cashew, see above)
