I love soups like this, but by their nature they tend to be pretty one note. Which is fine! Not everything needs to be a complex dance of 17 spices, flavors, and aromas. I am never making carrot soup, pumpkin soup, or butternut squash soup without jalapenos ever again. I have a bag I need to get rid of and I'm not a big fan of jalapeno, so a nice creamy carrot soup seemed like an ideal way to knock a few out without really tasting them. Boy was I wrong. Their flavor is very subtle because of the carrots and the cashew cream, but they added such a lovely earthy tone to the soup. Jalapeno gives the perfect level of dimension to something that otherwise would be nice but simple. I love it, I love it, cannot recommend enough. Even my mom, who does NOT do spicy, adored it after I cowed her into trying some. Fantastic!
