    We have 3 carrot cake lovers in our family and we use this recipe at least 3 times a year (our birthdays). Yum!!!

    I made cupcakes instead of cake, they were delicious. They baked for about 12 minutes. We didn't do the cream cheese frosting, instead we used a coconut frosting, but I would try cream cheese next time because the coconut didn't stand up well. I love this blog for egg free baked goods, this one was another hit.
