- 1 1/3 cups unbleached all-purpose flour (organic)
- 1 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. rock salt (Himalayan)
- 1/2 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1 1/3 cups coconut sugar
- 2/3 cup coconut oil
- 2/3 cup soy yogurt (or apple sauce)
- 1 Tbsp. vanilla
- 2 cups grated carrot (with extra juice squeezed out, I like to save my pulp from carrot juice & use it for cakes)
- 5 cups powdered sugar (+more to taste)
- 1 1/2 cups vegan butter (/margerine)
- 3 Tbsp. almond milk
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. vanilla extract
- 1 tsp. lemon juice
- 1/8 tsp. salt
