Very good! Hearty, and tastes less nutritious than it actually is. The turmeric gives it nice color and a pleasant sweetness. As another reviewer mentioned, it doesn't fit well in a single pie tin, but I piled it on anyway and it still cooked uniformly well. This could be done with lots of different vegetable fillings. I thought this particular combo was too heavy on the onion and bell pepper and too light on the broccoli, so I will try more broccoli next time. I'd also like to try spinach and mushroom with sun dried tomato and chili. I'll definitely make it again.

This will be a new regular on the menu! I added a bit of kala namak to the tofu mix and used red bell pepper, onion, broccoli, and spinach for my veggies. But you could do a million different things with veggie combos. A little cooked vegan bacon or sausage would be good too. It seemed a bit much for one pie crust (at least the ones I bought), but not quite enough for two. I went with two because I didn’t want to take a chance of it being undercooked in the center and it turned out great!
