doesnt taste like broccoli cheese soup. tastes good, but I wouldnt call it a vegan substitute.

I didn't have vegetable broth and sweet potatoes, so I used water and regular potatoes. I added 1 extra tablespoon of nutritional yeast and a little more potatoes. It came out sooooo good. My husband and I absolutely loved it. 😍

Really tasty. I added a couple of shiitake mushrooms to the cashew mix - makes for a nice, rich flavor.

There are A LOT of problems with this recipe. First you need to soak cashews OVERNIGHT or BOIL for 15 minutes or it will be totally grainy. When you blend the cashews you need a 1:1 ratio of water to cashews (recipe calls for 2:1) in order for it to get creamy. You will need to add acv and lemon juice for a sharper cheese like flavor.

so creamy! I ended up adding more onion, nutritional yeast, and added a little apple cider vinegar to give it a sharp cheddar flavor.

It had a bit too much garlic for my taste. I think I would leave out the garlic in the cheese sauce next time.

It was pretty good We have made the heavy cream version of this so Long that it was difficult for us to adjust to the less creamy taste

This soup was delicious!! Tasting the cheese sauce, I thought it needed something else, so I added in a bit of turmeric, paprika, and Trader Joe’s umami seasoning. I think it would have been fine with garlic only blended in the cheese sauce part, I don’t think it also needed it sautéed in the pan with the part that wasn’t blended. And unless it said it somewhere else in the post, I didn’t read how the sweet potatoes should be cooked - I chose to cut them in pieces, drizzle with olive oil, and cook in the oven while I prepared everything else.

I don’t remember what original broccoli cheese soup is supposed to taste like because it’s been so long since I’ve had it but I really liked the soup. Unfortunately, the broccoli out of my garden was a little “overripe” so the stalks were a bit woody. But if I ran the entire soup through my ninja blender it would be great!

I enjoyed this this soup! It really feels like there is cheese included in the recipe. This is great for the winter and I will likely make this again. I took the suggestions to add more sweet potato and cashews. Also had to season beyond the prescribed seasonings and added a little more yeast.

This was so good! Had a great texture and tasted amazing. I actually halted the recipe because I was only making for two. Turned out very well!

Amazing! I added extra sweet potato to thicken it up after I used an entire liter of veggie stock.

It was good straight from the recipe. However, I added a bit of extra seasoning, and a bit more cashew cheese and yeast to mine after it was done. . I just like salty food.
I'm not any more, but I was vegan for several years. If I had eaten this then I would have been in heaven.
