- 1 onion (large, peeled and thinly sliced)
- 1 1/2 lb. beets
- 6 garlic cloves (minced)
- 16 oz. shiitake mushrooms (organic, or any mushrooms of your choice. It is important to buy organic mushrooms as others are usually sprayed with synthetic formaldehyde, to maintain their freshness.)
- 1 1/2 cups water (filtered, or vegetable broth)
- 1 low sodium vegetable bouillon cube (organic, only if you use the water and not the broth)
- 3/4 cup red wine (organic)
- 2 Tbsp. grain mustard (sometimes called Old Fashioned)
- 1 can tomato paste (organic)
- 1 tsp. herb mix (Herbes de Provence)
- 1 handful olives (in olive oil)
- 2 sun dried tomatoes (organic, packed in olive oil, optional)
- 1 1/2 lb. potatoes (organic, your choice, white, red, or yellow flesh)
- 1 lb. celery root
- sea salt (grey)
- ground pepper
