    Super easy & super delicious ! My husband had no idea they were made from a vegan recipe. I agree that using a good cookie scoop is a must. I also chilled the dough for about an hour before baking which helped firm up the dough. I didn't have any pecans so I used walnuts instead & the cookies turned out fine. The only change I would make is adding a bit more cinnamon. Otherwise, this recipe is a keeper. 😊
