- 14 oz. cherry tomatoes (can peeled, in their juice)
- 3 Tbsp. tomato paste (concentrated)
- 1 red onion (finely diced)
- 3 garlic cloves (finely chopped)
- 2 slices pepper (sun dried, finely diced + 1 tbsp of their oil (from a jar))
- 1 handful pitted green olives (sliced, I used Greek Halkidiki marinated olives)
- 2 tsp. sugar
- 1 Tbsp. lemon juice
- 1 bay leaf
- salt
- freshly ground pepper
- olive oil (to fry as needed)
- 2 eggplant (large aubergines, cut into small cubes)
- 1 red onion (diced)
- 3 garlic cloves (finely chopped)
- 3.5 oz. breadcrumbs (1 thick slice of bread – I used stale rye bread)
- 1 handful pitted green olives (I used Greek Halkidiki marinated olives)
- 1 Tbsp. lemon juice
- 1/2 Tbsp. balsamic vinegar
- 1 handful fresh basil (large)
- 1 tsp. dried oregano
- 1 pinch chilli flakes (flakes)
- 1 lemon zest (– reserve some to sprinkle over finished dish)
- salt
- freshly ground pepper
- olive oil (to fry as needed)
- 1 Tbsp. flat leaf parsley (very finely chopped, to serve)
- 1 Tbsp. fresh basil (very finely chopped, to serve)

To say they are “soft” is an understatement! I couldn’t make them into balls despite really chilling down the mix.

For the final step, I had better luck reheating the meatballs on an electric griddle with cooking spray. They kept their texture much better.
