- 1/3 cup coconut oil (measured when solid. I prefer the cold pressed but you can taste the coconut. Refined will make the taste very buttery)
- 1 Tbsp. canola oil (rapeseed, or a similar oil that you like the taste of. Or try a blend!)
- 2/3 tsp. apple cider vinegar (or freshly squeezed lemon juice)
- 1/3 tsp. salt (or more)

Fabulous. Keeps very well in fridge. Next time I’ll add more oil to see if it can be made softer - it sets hard in fridge. Have also cooked with it with success e.g. in passionfruit curd
