- 4 cups vegetable stock
- 1/2 tsp. salt
- 1 tsp. cumin
- 1/2 tsp. ground coriander
- 1/4 tsp. cayenne
- 15 oz. diced tomatoes (can of, including juices)
- 5 cups sweet potatoes (cut into 2 inch cubes; roughly 2 medium sweet potatoes)
- 1/2 cup natural peanut butter (creamy or crunchy)
- 1 onion (diced)
- 4 cloves garlic (minced)
- 1 inch ginger (finely grated)
- 4 spinach (handfulls, chopped)

Whole family liked it! Everyone got seconds!
My only change was doubling the coriander and ginger. Served with homemade naan, could add rice next time to make it go farther.

I love a slow cooker soup . This one is delicious. Peanut butter and chickpeas are my favourites . Highly recommended this soup

LOVE THIS! My husband is obsessed and when he saw the ingredients he was hesitant but after eating it has become a regular staple for cooler weather. I do blend the ster with a handheld blender so give a smoother texture, which beautifully blends everything together. We will be making this for years to come!

This was ok. Need to see if day 2 brings about some more interest, but I’ve been a bigger fan of other peanut stews. Thinner than others and the sweet potato wasn’t the sweetest (so that’s on me). Making some rice to accompany it, so will see if that helps

This meal was absolutely delicious we added chili oil to the meal and served it over white rice. It will need more spices than the recipe call for but it will be a staple at my house

Yummmmmmmm!!! LOTS of flavor.
Only very minor issue I had was mashing up the sweet potatoes, but I just did it in the bowl & it worked better than trying to mash them in the pot.
Again, did I say YUMMMMMM?!

I was pleasantly surprised by how delicious this was! I am intolerant to onions and garlic, so I added celery and extra ginger instead. It turned out so good! I was worried that no onions or garlic would compromise the flavor of the meal, and I am sure it tasted different than it normally would, but it was still really delicious. Will definitely make again!

I thought it was good, but missing a spice I can't quite put my finger on just yet. I wish the nutritional information included an actual serving size measurement vs 1/8 batch.

Absolutely delicious! Warm, rich and super tasty. I modified the recipe by doubling the peanut butter. It’s great on its own; however my husband preferred it over rice.
